Easy No-Bake Apricot Nut Bars

With so many decadent and calorie rich desserts and snacks abounding due to the holiday season I wanted a easy dessert bite that wasn’t, had lots of good things in it, and didn’t need to be baked. These simple Easy No-Bake Apricot Nut Bars fit the bill perfectly.
Made with a base of dates, dried apricots, nuts and almond butter these are super good for you and come together in no time. I pressed some crunchy flax cereal on top with more chopped, dried apricots and was pleasantly satisfied when the sweet tooth hit me.
I came across the crunchy flax cereal the other day at my local Sprouts, but am sure they can be found at Whole Foods, Trader Joes and the like. I found them to be fantastic as a texture addition as well as a healthy, crunchy topping. If you can’t find them substitute them with the same amount of oats. Let’s get started!
In your food processor chop the apricots, dates, almonds, almond butter, honey and vanilla.
Add a little warm water if needed until all the ingredients come together. Add the oats  and salt and pulse until all is mixed.
Scoop mixture out onto parchment paper, top with crunchy flax cereal and 2 tablespoons of chopped apricots.
Place another sheet of parchment paper on top and press gently with rolling pin. Roll out to desired pan size of a 9″ x 9″ square. This is so sticky on it’s own I preferred doing it this way.
Lift by the parchment paper and drop into the square pan. Remove the top sheet of parchment paper and discard.
Refrigerate for at least 3 hours to firm up and then slice into squares.
These fruity, chewy and nut bars are fantastic and the crunchy flax cereal as that bit of texture to make this one fantastic snack.
Keep these guys refrigerated to hold their shape and stay fresh, but I don’t think they will last that long, enjoy!

I am doing a lot of bar cookies for a function this year and would like to make them early.

I have not ever frozen these so I would not have a reference. Although I do not see why not, the crunchy flax cereal might no longer have the same texture though. Please let me know!

Thank you for this recipe. We live in China currently and I have been enjoying a similar Apricot Nut bar here that is made by a local restaurant. We move in June, so I was on a search of how to recreate it. I think your recipe is really close. Only difference is they add sesame seeds and Chinese green pumpkin seeds to their version–very tasty. Going to try your base and mix in the other seeds. Praying it is a match…if not a great new favorite. So glad to have found your site and this recipe. Thanks again!

Thanks David, these are good and definitely a bit sticky to initially work with, but worth it! As for Winter, you bet! It’s been all sorts of wind, rain and cold. Today should be a bit of snow so we are getting a nice taste of season weather up here – quite the change from San Diego!
