I have it mentioned in the Notes section, but if you can’t find canned Hatch green chiles other substitutes can be any mild green chili: Green Bell Peppers, Anaheim Peppers, Poblano Peppers. Enjoy this one Sandi. 🙂

I made this soup over the weekend for me and my sister. It was quick and simple to make, but so flavorful. I have never used Mexican oregano before — you introduced me to a new spice! My sister isn’t a fan of cheese soups per se, but this is well-balanced and still seems “light” even though it is hearty.
Thank you for all your recipes — I come here first when looking for ideas and you have never yet steered me wrong.

I was inspired to make this after the wife and I had A potato cheese soup at a Peruvian restaurant this past weekend. I liked what we had at the restaurant but she raved about it so I thought I would make my own version for her as I am the cook in the family.

I was attracted to look and additional vegetables (corn and peas) of this recipe more than the very white creamy soup we were served. I definitely lean towards a rustic presentation in much of what I cook. For example I prefer the skins left on my potatoes for reasons of appearance, toothsomeness, and nutritional value.

I made some modifications and substitutions based on what I had and also my own personal preferences. For example I felt it needed more EVOO when sautéing my onions and garlic. I used half a can of fire roasted corn since I did not have fresh. Also doubled the amount of garlic as we are big fans. And in lieu of chili pepper flakes, I added two finely minced fresh jalapeño peppers that had been deveined and seeds removed.

All in all we both enjoyed it and I will make it again.
