In a medium sized bowl whisk together the mayonnaise, Dijon mustard, lemon juice, parsley, dill, salt and pepper.
Cut the chicken into small cubes and add to the mixing bowl. Add celery, green onions and toss to mix thoroughly. Season to taste.
Chill or serve immediately over salad greens, in a lettuce wrap, stuffed in a bell pepper, on bread for sandwiches or with crackers.

Notes
I use rotisserie chicken breast meat from Costco. Typically 2 large chicken breasts cubed will be about 3-4 cups. You can also substitute (3) 12.5 ounce canned, drained).
Feel free to substitute 1/3 cup diced red onion. To reduce the bite, soak diced red onion in water for 10 minutes and drain before using.
Yellow mustard or mustard of choice may be substituted.
