White Chocolate Caramel Blondies

My White Chocolate Caramel Blondies are quick to make. Add whatever you like to them like my combination of white chocolate chips and caramel pieces.
Blondies are the blonder brownie. Get it? Â Seriously these are a favorite go to for a bar type cookie. They are quick to make, start with a simple base and soothe that sweet tooth fix. Add whatever you like to them be it dried fruit, any kind of chocolate chip, chopped candy bars or the like, or a combination of white chocolate chips and caramel pieces.
I wasn’t in the mood for a milk chocolate, semi-sweet or a dark chocolate fix and since blondies were on my mind white chocolate would do. But, it needed a little something more and these amazing Kraft Caramel Bits I had on hand were perfect.
I have used them before in my Cinnamon Apple Caramel Blondie Bars and they are perfect little nuggets of caramel. I can only find them at Target, but I am sure cutting up some caramels would be just fine as well.
If you’re looking for a warm, soft bar cookie these are right up your alley. And the buttery goodness mixed with the gooey soft centered dough is perfection. I like to bake them just a little under by a minute to keep them on the chewy side.
Start by getting that oven preheated to 350°. Line a 9-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on the sides to lift the finished warm, delicious Blondies out.
Mix together the dry ingredients: flour, baking powder, baking soda, and salt. Set aside. In a separate bowl, blend the melted butter, brown sugar, and vanilla together until combined. Add egg and mix well.
Slowly add in the dry ingredients and stir together. Fold in the white chocolate and caramel chips. The batter will be super thick. Spread evenly into prepared baking pan using a rubber spatula dipped in water.
If you have been a reader here you know I love cinnamon so go and sprinkle the top with the cinnamon. Bake these for 20 minutes or until lightly browned on top. Remove from the oven and allow to cool completely before cutting into 12 squares. I like them a little big, so one should suffice at that size!
Look at the lovely little caramel chips, some still a little hard, some gooey and warm. The white chocolate melting as well. These are just so darn good!

- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1 cup brown sugar
- 1/3 cup unsalted butter melted
- 1 tbsp vanilla extract
- 1 large egg
- 1 cup white chocolate chips
- 1/2 cup caramel chips
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350°.

Unfortunately way too sweet for me. I would reduce the white chocolate to 1/2 cup. I felt like all I was eating was chips! There wasn’t enough dough to go with the chips.

These turned out great with gluten free flour! I used the King Arthur multi-purpose flour. They didn’t rise as much as yours but still taste amazing.

Changed the a little. No cinnamon on top. Added dark chocolate along with white, and the caramel chips. Yum. Will make again. TY.
