I mention this often, but it’s worth repeating; a good majority of the pantry staples we buy from the store are massively overpriced. Not only that, but many times, we have no idea what’s in them or how long they’ve been sitting on the store shelves.

When was the last time you looked at the nutrition or ingredient label on a package of adobo seasoning or Tajin seasoning? I’ll save you the trouble… both of those essential pantry seasonings have MSG in them, as well as enough salt to spike the blood pressure a couple of points.

Creating homemade pantry staples just makes sense; you’ll save money and have full control over what goes into the bottle.

Chicken fajitas aren’t meant to be spicy, so you won’t need any spicy ground chile powders.

However, I do use homemade chili seasoning in this recipe, as well as my steak fajita seasoning. Chili powder is another super easy seasoning to make at home. Of course, you can use your own recipe, or buy it from the store if you’d like.

In addition to the chili powder, you’ll need some basic Tex Mex cooking spices like garlic powder, cayenne pepper, oregano, and cumin.

Other Uses

In addition to using the blend for grilled chicken fajitas, I like to use it as a basic poultry seasoning for many of my Tex Mex and Mexican chicken recipes.

You could even stir a bit of chicken fajita seasoning into sour cream or Mexican crema to add extra flavor for things like baked potatoes. Sprinkle it onto a salad or use it to make a fantastic cheese dip.

What’s the difference between fajita seasoning and taco seasoning?


Some of the basic Tex Mex and Mexican spice blends we use every day have similar ingredients, but in different amounts. For example, taco seasoning has a lot more chili powder in it than fajita seasoning does. I like chicken tacos to be spicier than chicken fajitas, so there’s also more cayenne pepper in my homemade taco seasoning.

How long will homemade spice blends stay fresh?


Keep your homemade seasonings in an airtight container or glass bottle, and store them in a cool, dry location. When kept this way, they should stay fresh for anywhere from 6 months to 1 year.

  • Whisk together the ingredients in bowl and store in an airtight container. Makes about 1/3 cup total.

Notes

  1. Mexican oregano is a relative of Lemon Verbena and is native to Mexico. Similar in that it’s pungent like Mediterranean oregano, Mexican oregano has notes of mild licorice and citrus. Mediterranean oregano is a member of the mint family and most often is used in Greek and Italian recipes. Mediterranean oregano is the one most found in spice racks and supermarkets.

  1. Could you please cut those annoying videos that can’t be turned off? You have some amazing recipes, but those videos that take up 1/4 of the screen on my phone are just a pain in the ass.

    1. Dan, you can simply tap the (close) on the top right of the video to shut it off. Sadly, I do need to make revenue to keep this site going. It helps with site hosting, shopping supplies for recipe development and employees. While I do myself find it one extra step, some readers do find them helpful. Starting in May I will do a test to see a revenue reduction by turning that feature off for a month and re-think keeping it or not. I do want the best user experience for valued readers like yourself, but there also needs to be a happy balance. Hope this gives you some insight on why it’s there.
