I tried Gigi’s recipe, but with a few modifications.

1. I didn’t have any oregano leaves so I used one teaspoon of ground oregano, and 1 teaspoon of marjoram leaves.
2. I am cooking at an altitude of about 3000 feet above sea level; so instead of 15 minutes I did 20 min. I just kept checking for tenderness to make sure I didn’t overcook them or undercooked them. It sure was fun tasting them as they cooked.

We can hardly wait for them to marinate enough to be really pickled. So far they are absolutely delicious.

I would try a small batch and test it to see your tastes Randy, but feel free to use pickled jalapenos juice instead of the vinegar, I just can’t speak to that. Was wondering if I don’t jar or can the carrots will they still have that same great taste just marinade In the fridge , also was wondering if I use the jalapeño juice from a jar in place of the vinager , I’m not really a vinager person but ever time I had them at restaurants in California there the bomb and I don’t taste vinager . Any suggestion on this and appreciate your recipe n videos too . Love this

Good question Scott. First, its good to double check that the seal is good on the lid itself (not relying on the indent on lid) and secondly so you can use them on other canning projects. Hope this helps.
